There has been a bakery at 89 Norfolk Street since 1868, and its doors have opened again with a fresh new look and a keen young baker – Adilia Frazao.
It’s a pretty early start for anyone who is in the business of running a bakery. So considering Adilia’s day sees her up and baking at 3am, it’s a good thing she is so passionate about bread. Fond childhood memories of taking over in the kitchen of her home in Portugal when her mother was out, coupled with discovering her love of bread and pastry while working as a chef in London, Adilia has the knowledge as well as the passion for what she does.
The artisan breads are made using organic flour and include British classics such as sourdough, wholemeal and bloomers, as well as tempting Mediterranean rustic bread and rolls and the very popular rich German Ryes. Each week, Adilia introduces something new for her customers like focaccia or the very moreish chorizo rolls and like all the breads, are baked on-site every day.
And for the sweet-toothed, there is the chance to try out various Portuguese-influenced cakes and pastries. Along with muffins, Danish pastries and brownies, Adelia makes Portuguese custard tarts and other cakes inspired by her homeland. She has learnt that not all are to the taste of some of her British customers, but she relishes the creative challenge of tailoring the ingredients and trying out her new ideas.
